Nature has published a fascinating paper that solves a seemingly silly but very interesting question: why do Western and Asian foods taste so different After analyzing 56,498 recipes the answer is in the way they pair 381 ingredients. Why do they taste different According to the study, Western cuisines have a tendency to pair ingredients that share many of the same flavor compounds. East Asian cuisines, however, do precisely the contrary, avoiding ingredients that share the same flavor compounds. The more flavors two ingredients share, the less likely they would be paired together in Asian kitchens. Why is this important This is the first time that a experimental study has confirmed what only was an hypothesis over the past decade: This food pairing hypothesis has been used to search for novel ingredient combinations and has prompted, for example, some contemporary restaurants to combine white chocolate and caviar, as they share trimethylami stanley italia ne and other flavor compounds, or chocolate and blue cheese that share at least 73 flavor compounds. However, since Asian food works by avoiding food pairs, their analysis also destroys the idea stanley mugs that flavo stanley cup r pairing is the only way to achieve amazing new plates. According to the study, this discovery of patterns that may transcend specific dishes or ingredients may open new ways to cook. Want to know how to take the temperature of stanley flask all the ocean between California and Hawaii All you need is the right sound. A special acoustic technique lets people figure out the temperature of the ocean, and how it might be changing from year to year. There no real way to take simultaneous temperature readings of every section of ocean between continents, and so there should be no way to get an average ocean temperature. One technique manages to do just that. It called acoustic thermometry, and it another example of physics going poetic. Because water is denser than air, sound travels faster underwater. As we get down to very low frequencies, sound also travels more efficiently. Whales use sound below 100 cycles per second to communicate across thousands of miles. Scientists do the same. Stations emit specific sounds on one continent and other stat gourde stanley ions pick it up thousands of miles away. Because the stations can communicate with each other in ways besides sound, the receiving station knows exactly when the emitting one makes the sound, and calculates the time it takes the sound to make the voyage. But repeated signals between different stations can let scientists know the temperature of the ocean by the sound it makes.
